    Prepare the Greens

    In a pot of boiling water, blanch the chopped spinach and mustard greens for about 2-3 minutes. Drain and transfer to a blender. Blend until smooth and set aside.

    Cook the Lamb

    In a large pan, heat the cooking oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then, add the chopped onion and sauté until golden brown.

    Add Spices

    Stir in the grated ginger, minced garlic, and chopped tomato. Cook until the tomatoes soften. Then, add coriander powder, turmeric powder, chili powder, and salt. Mix well.

    Combine and Simmer

    Add the cubed lamb to the pan and cook for about 5 minutes, stirring occasionally. Pour in the water, bring to a boil, then reduce heat to low. Cover and simmer for about 30 minutes or until the lamb is tender.

    Add the Greens

    Once the lamb is tender, stir in the pureed spinach and mustard greens. Cook for an additional 10 minutes, adjusting the seasoning as necessary.
