    Prepare the Dough

    In a bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. In a large mixing bowl, combine flour and salt. Add the yeast mixture and oil. Knead to form a soft dough. Cover and let rise for 1-2 hours until doubled in size.

    Make the Filling

    In a frying pan, heat oil and add cumin seeds. Once they splutter, add the chopped onions, green chilies, and salt. Sauté until onions are translucent. Stir in coriander leaves and garam masala. Remove from heat and let cool.

    Assemble the Kulcha

    Once the dough has risen, divide it into equal portions. Roll each portion into a small circle, place a spoonful of the onion filling in the center, and fold the edges over to seal. Flatten gently.

    Cook the Kulcha

    Preheat a tawa or skillet. Cook the kulcha on medium heat, flipping until both sides are golden brown and cooked through. Optionally, brush with butter or ghee before serving.
