Pakoras

Prepare the Batter
In a bowl, mix chickpea flour, water, cumin seeds, turmeric powder, red chili powder, and salt to form a thick batter.

Prepare Vegetables
Cut cauliflower, eggplant, and potato into bite-sized pieces.

Fry the Pakoras
Heat oil in a deep frying pan. Dip pieces of vegetables into the batter and fry until golden brown. Drain on paper towels.
Samosa

Prepare the Dough
Mix all-purpose flour, salt, and a little water to form a smooth dough. Let it rest for 30 minutes.

Prepare the Filling
In a bowl, mix mashed potatoes, peas, cumin seeds, garam masala, and salt.

Assemble the Samosas
Roll out the dough into circles, cut in half. Fill with the potato mixture and shape into triangles. Seal the edges.

Fry the Samosas
Heat oil in a deep frying pan. Fry the samosas until golden brown. Drain on paper towels.
Chicken Pakoras

In a bowl, mix chickpea flour, ginger-garlic paste, cumin powder, red chili powder, and salt to form a batter.

Coat diced chicken in the batter.

Heat oil in a deep frying pan. Fry the chicken pieces until golden brown. Drain on paper towels.
Papadum

Cook the Papadum
You can roast the papadum over an open flame or fry in hot oil until crisp.
