    Prepare the Vegetables

    In a large bowl, combine the cauliflower florets and diced potatoes. Set aside.

    Sauté the Aromatics

    In a large pan, heat the cooking oil over medium heat. Add cumin seeds and sauté for about 30 seconds until they begin to crackle. Then add the chopped onion and sauté until golden brown.

    Add Garlic and Ginger

    Stir in the minced garlic and grated ginger. Cook for about 1-2 minutes until fragrant.

    Incorporate Spices and Tomato Puree

    Add turmeric powder, coriander powder, and salt. Mix well, then add the tomato puree. Cook for about 5 minutes until the oil starts to separate from the mixture.

    Cook the Vegetables

    Add the cauliflower and potato mixture to the pan. Stir well to coat the vegetables with the spice mixture. Pour in about 1 cup of water, cover, and let it simmer for about 15-20 minutes or until the vegetables are tender.

    Finish with Garam Masala

    Once the vegetables are cooked, sprinkle garam masala on top and stir to combine. Cook for an additional 2 minutes.

    Remove from heat, garnish with chopped fresh cilantro, and serve hot with rice or naan.
