Prepare the Cashew Paste
Blend the soaked cashews with a little water until smooth to make a cashew paste.

Cook the Aromatics
In a large skillet, heat the oil over medium heat. Add the chopped onion and sauté until translucent. Add minced garlic, grated ginger, and slit green chili, cooking for an additional 2 minutes.

Spice It Up
Stir in the turmeric, coriander, and cumin powders. Cook for another minute, allowing the spices to bloom.

Add Shrimp and Coconut Milk
Add the shrimp to the skillet, stirring to coat with the spices. Pour in the coconut milk and bring to a gentle simmer. Cook for about 5-7 minutes until the shrimp are cooked through.

Finish the Sauce
Stir in the cashew paste and season with salt to taste. Cook for another 2-3 minutes until the sauce thickens slightly.

Garnish and Serve
Remove from heat and garnish with fresh chopped cilantro. Serve hot with rice or naan.
