    Marinate the Meat

    In a bowl, combine the chicken or lamb pieces with yogurt, garlic, ginger, and half of the spices. Add salt to taste. Marinate for at least 1 hour, preferably overnight in the refrigerator.

    Prepare the Rice

    Wash the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

    Cook the Meat

    In a large pan, heat the oil or ghee over medium heat. Add the sliced onions and cook until golden brown. Add the marinated meat and the remaining spices. Cook until the meat is browned.

    Add Stock

    Pour in the chicken or lamb stock and bring to a simmer. Cover and cook until the meat is tender (about 20-30 minutes for chicken, 40-50 minutes for lamb).

    Layer the Biryani

    In a large pot, layer half of the cooked meat mixture, half of the soaked rice, and half of the raisins and cashews. Repeat the layers with the remaining meat, rice, raisins, and cashews.

    Finish Cooking

    Cover the pot tightly and cook on low heat for 20 minutes, allowing the flavors to meld and the rice to cook completely.

    Garnish and Serve

    Remove from heat and let it sit for 10 minutes. Fluff the biryani gently with a fork, garnish with chopped cilantro, and serve hot.
