    Prepare the Dal

    Rinse the red lentils under cold water until the water runs clear. In a pot, heat oil or ghee over medium heat, add cumin seeds and let them splutter.

    Add the chopped onions and sauté until they turn golden brown. Incorporate the minced garlic, grated ginger, and slit green chili (if using), and cook for another minute.

    Stir in the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes soften, about 3-4 minutes.

    Add the rinsed lentils and water to the pot. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 20-25 minutes, or until the lentils are soft and creamy. Stir occasionally and add more water if needed.

    Cook the Rice

    While the dal is simmering, rinse the basmati rice under cold water until the water runs clear. In a separate pot, bring 2 cups of water to a boil, add the rinsed rice, and a pinch of salt.

    Cover and reduce heat to low. Cook for about 15 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Serve

    Fluff the rice with a fork and serve it alongside the hot Bombay dal. Garnish with chopped cilantro.
