    Rinse the whole Kona Kanpachi under cold water and pat dry with paper towels. Make sure to clean the cavity thoroughly.

    Season the Fish

    Rub the fish inside and out with kosher salt and black pepper. Let it sit for about 15 minutes to absorb the seasoning.

    Heat the Oil

    In a large, deep skillet or wok, heat the vegetable oil over medium-high heat until it shimmers.

    Fry the Fish

    Carefully place the seasoned fish in the hot oil. Fry for about 8-10 minutes on each side or until the skin is crispy and the fish is cooked through.

    Sizzle the Aromatics

    In the last few minutes of frying, add the minced garlic, ginger, and chopped green onions to the oil. Spoon the hot oil over the fish to infuse it with the flavors.

    Finish with Cilantro

    Once cooked, remove the fish from the oil and place it on a serving platter. Sprinkle the chopped cilantro over the top before serving.
