Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into thick fries, about 1/2 inch wide.

Soak the Fries

Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Heat the Oil

In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes

Remove the fries from the water, pat them dry with a towel, and carefully add them to the hot oil in batches, frying until golden brown, about 5-7 minutes.

Drain and Season

Remove the fries from the oil and drain them on paper towels. While still hot, sprinkle with salt to taste.
