Shrimp Skewers Preparation

Marinate the Shrimp

In a bowl, combine olive oil, minced garlic, lemon juice, salt, and black pepper. Add shrimp and toss to coat. Allow to marinate for 30 minutes.

Pre-soak wooden skewers in water for 30 minutes to prevent burning. Thread marinated shrimp onto skewers.

In a blender, combine chopped peaches, chopped tomatoes, balsamic vinegar, honey, salt, and black pepper. Blend until smooth. Slowly add olive oil while blending until emulsified. Adjust seasoning if necessary.

In a large bowl, toss baby greens with olive oil, lemon juice, salt, and black pepper until well coated.
