Pickled Mushrooms

    Make the Pickled Mushrooms

    In a small saucepan, combine white wine vinegar, water, salt, sugar, smashed garlic, and thyme. Bring to a simmer over medium heat until the salt and sugar dissolve. Add the sliced mushrooms and simmer for 2-3 minutes. Remove from heat and let cool before transferring to a jar. Refrigerate for at least 30 minutes before serving.

Cauliflower 'Bolognese'

    Prepare the Cauliflower 'Bolognese'

    In a large skillet, heat olive oil over medium heat. Add the chopped onion, carrot, and celery, cooking until softened (about 5 minutes). Stir in the minced garlic and cook for another minute. Add the chopped cauliflower and cook until it starts to soften (about 5-7 minutes). Pour in the crushed tomatoes, oregano, salt, and pepper. Simmer for 15 minutes, stirring occasionally.

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Combine and Serve

    Add the cooked pasta to the skillet with the cauliflower 'Bolognese', mixing well. Add reserved pasta water as needed to achieve desired consistency. Serve topped with pickled mushrooms.
