    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer to a bowl and let it cool slightly.

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold this mixture into the warm sushi rice gently with a spatula. Allow the rice to cool to room temperature.

    Prepare the Vegetables

    Julienne the cucumber, carrot, and avocado into thin strips.

    Assemble the Maki Roll

    Place a bamboo sushi mat on a flat surface. Lay a sheet of nori on the mat, shiny side down. Wet your hands to prevent sticking and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge.

    Arrange the julienned vegetables in a line across the center of the rice-covered nori.
