Method
Prepare the Pork Belly

Season and Sear
Rub the pork belly with salt and black pepper. In a large skillet, heat vegetable oil over medium-high heat. Sear the pork belly on all sides until golden brown, about 5-7 minutes.

Cook the Pork Belly
Reduce the heat to low, cover, and cook for about 1.5 to 2 hours until the pork is tender. Remove from the skillet and let it rest before slicing.
Make the Ume Glaze

Combine Ingredients
In a small bowl, mix together umeboshi paste, honey, soy sauce, and rice vinegar until smooth.

Glaze the Pork
Once the pork belly has rested, slice it into thin strips. Brush the ume glaze over the strips of pork.
Assemble the Bao Buns

Warm the Bao Buns
Steam the bao buns according to package instructions or until warm.

Place a few slices of ume-glazed pork belly inside each bao bun. Top with pickled ginger, sliced green onions, and sesame seeds.
