Method

Prepare the Pork

    Marinate the pork

    In a bowl, mix umeboshi paste, soy sauce, mirin, minced garlic, and grated ginger. Add the pork belly and marinate for at least 1 hour, preferably overnight.

    Grill the pork

    Preheat the grill to medium-high heat. Grill the marinated pork belly for about 5-7 minutes on each side until cooked through and slightly charred. Let rest before slicing.

Prepare the Pickled Namasu

    Pickle the vegetables

    In a bowl, combine rice vinegar, sugar, and salt. Add julienned daikon radish and carrot. Mix well and let sit for at least 30 minutes.

Make the Bao Buns

    Prepare the dough

    In a bowl, mix warm water, yeast, and sugar. Let it sit for 5 minutes until frothy. In a separate bowl, combine flour, baking powder, and salt. Add the yeast mixture to the flour and knead into a smooth dough.

    Steam the bao buns

    Divide the dough into small balls and roll them into flat rounds. Place them on parchment paper and steam in a bamboo or electric steamer for about 10 minutes.

Assemble the Dish

    Assemble the bao

    Slice the grilled pork belly and place it inside the steamed bao bun. Top with pickled namasu and garnish with micro cilantro.
