    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to create fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch.

    Dry the Fries

    Drain the fries and pat them dry with paper towels to remove any excess moisture.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the fries to the hot oil in batches, frying until they are golden brown and crispy, about 4-5 minutes per batch.

    Drain and Season

    Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt and black pepper.

    Add Parmesan and Truffle Oil

    Immediately toss the hot fries with grated Parmesan cheese and drizzle with truffle oil to taste.

    Serve

    Serve the truffle fries hot, garnished with additional Parmesan if desired.
