Preparing the Brussels Sprouts

Roast the Brussels Sprouts
Preheat the oven to 400°F (200°C). Trim the ends of the Brussels sprouts and cut them in half. Toss them in a bowl with olive oil, salt, and black pepper until well coated. Spread them on a baking sheet in a single layer.

Bake
Roast the Brussels sprouts in the preheated oven for about 25-30 minutes, or until crispy and golden brown, tossing halfway through.

Add Truffle Oil and Parmesan
Remove from the oven and drizzle with truffle oil. Sprinkle grated Parmesan cheese over the top while still warm.
Making the Parmesan Cream

Heat the Cream
In a saucepan over medium heat, combine the heavy cream and minced garlic. Bring to a gentle simmer, stirring occasionally.

Add Cheese
Once simmering, gradually whisk in the Parmesan cheese until melted and smooth. Season with salt and black pepper to taste.
