Fried Chicken

Creamy Polenta

Method

Fried Chicken Preparation

  1. 1

    Marinate the Chicken

In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. 2

    Prepare the Coating

In a separate bowl, mix the flour and cornstarch together. Dredge the marinated chicken pieces in the flour mixture until fully coated.

  3. 3

    Fry the Chicken

In a large heavy skillet, heat the vegetable oil over medium-high heat. Once hot, add the chicken pieces in batches, making sure not to overcrowd the pan. Fry until golden brown and cooked through, about 12-15 minutes per side. Drain on paper towels.

Creamy Polenta Preparation

  1. 4

    Cook the Polenta

In a pot, bring the water to a boil. Gradually whisk in the polenta and cook while stirring over low heat until thickened, about 20 minutes.

  2. 5

    Finish the Polenta

Stir in the heavy cream, Parmesan cheese, salt, and pepper. Mix until creamy and smooth. Keep warm.

'1849' Gravy Preparation

  1. 6

    Make the Gravy

In the same skillet used for the chicken, pour off all but 1 cup of drippings. Heat over medium heat and whisk in the flour, cooking for about 1-2 minutes. Gradually whisk in the chicken broth, cooking until the gravy thickens. Season with salt and pepper to taste.
