Method
Fried Chicken Preparation

Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Coating
In a separate bowl, mix the flour and cornstarch together. Dredge the marinated chicken pieces in the flour mixture until fully coated.

Creamy Polenta Preparation

Cook the Polenta
In a pot, bring the water to a boil. Gradually whisk in the polenta and cook while stirring over low heat until thickened, about 20 minutes.

Finish the Polenta
Stir in the heavy cream, Parmesan cheese, salt, and pepper. Mix until creamy and smooth. Keep warm.

Make the Gravy
In the same skillet used for the chicken, pour off all but 1 cup of drippings. Heat over medium heat and whisk in the flour, cooking for about 1-2 minutes. Gradually whisk in the chicken broth, cooking until the gravy thickens. Season with salt and pepper to taste.
