Method

Panna Cotta Preparation

  1. 1

    Bloom the Gelatin

In a small bowl, combine the gelatin powder with cold water. Let it sit for about 5 minutes to bloom.

  2. 2

    Heat the Cream Mixture

In a saucepan, combine heavy cream, whole milk, granulated sugar, and vanilla extract. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling.

  3. 3

    Combine and Cool

Remove from heat, stir in the bloomed gelatin until completely dissolved. Pour the mixture into serving cups and refrigerate until set, about 4 hours or overnight.

Macerated Strawberries

  1. 4

    Mix Strawberries

In a bowl, combine sliced strawberries, dark balsamic vinegar, and sugar. Toss gently and let sit for at least 30 minutes to macerate.

Pickled Orange Wedges

  1. 5

    Prepare Pickling Solution

In a saucepan, combine water, white vinegar, sugar, and salt. Bring to a boil, then remove from heat.

  2. 6

    Pickle the Oranges

Add orange segments to the pickling solution. Allow to cool, then refrigerate for at least 1 hour.

Whipped Cream

  1. 7

    Whip the Cream

In a bowl, whisk heavy cream, powdered sugar, and vanilla extract until soft peaks form. Refrigerate until serving.

Assembly

  1. 8

    Serve

To serve, scoop panna cotta into bowls, top with macerated strawberries, pickled orange wedges, whipped cream, and garnish with mint leaves and orange zest.
