Method
Panna Cotta Preparation

Bloom the Gelatin
In a small bowl, combine the gelatin powder with cold water. Let it sit for about 5 minutes to bloom.

Heat the Cream Mixture
In a saucepan, combine heavy cream, whole milk, granulated sugar, and vanilla extract. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling.

Combine and Cool
Remove from heat, stir in the bloomed gelatin until completely dissolved. Pour the mixture into serving cups and refrigerate until set, about 4 hours or overnight.

Pickle the Oranges
Add orange segments to the pickling solution. Allow to cool, then refrigerate for at least 1 hour.
Whipped Cream

Whip the Cream
In a bowl, whisk heavy cream, powdered sugar, and vanilla extract until soft peaks form. Refrigerate until serving.
Assembly

Serve
To serve, scoop panna cotta into bowls, top with macerated strawberries, pickled orange wedges, whipped cream, and garnish with mint leaves and orange zest.
