Cheesecake Base

    Prepare the crust

    Preheat the oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden. Allow to cool.

    Make the cheesecake filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar and vanilla extract, mixing until combined. Add sour cream and mix well. Finally, add the eggs one at a time, mixing on low speed until just combined. Fold in mini chocolate chips. Pour the filling over the cooled crust.

    Bake the cheesecake

    Bake the cheesecake at 325°F (160°C) for 45-55 minutes or until the center is set. Turn off the oven and leave the cheesecake in the oven for 1 hour. Remove and cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

    Prepare the bananas

    Melt the semi-sweet chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 30 seconds until smooth. Slice the bananas into bite-sized pieces, then dip each piece into the melted chocolate. Place on a parchment-lined baking sheet and freeze for about 30 minutes until set.

    Make the marshmallow

    In a small saucepan, combine sugar, corn syrup, and water. Bring to a boil over medium heat, stirring until sugar dissolves. In a separate bowl, sprinkle gelatin over 1/2 cup cold water and let it bloom. Once the syrup reaches 240°F (115°C), remove from heat and slowly pour into gelatin while whisking. Continue to whisk until mixture triples in volume and is fluffy. Add vanilla extract and mix well. Pour into a greased dish and let it set for 4 hours or until firm.
