Method

Preparation of Tsukemono

    Make the Pickling Liquid

    In a bowl, combine rice vinegar, sugar, and salt. Stir until sugar dissolves.

    Add julienned carrot and cucumber to the pickling liquid. Let sit for at least 30 minutes.

Cooking the Noodles

    Bring a pot of salted water to a boil. Add cha soba noodles and cook according to package instructions (usually 3-5 minutes).

    Drain the noodles and rinse them under cold water to stop the cooking process. Set aside.

Making the Tosazu Dressing

    In a small saucepan, combine dashi stock, soy sauce, mirin, and rice vinegar. Heat gently until warmed through, then set aside.

Assembly

    In a serving bowl, place a portion of cha soba noodles. Top with tsukemono, ikura, and slices of smoked salmon.

    Drizzle with tosazu dressing and garnish with chopped green onions and toasted sesame seeds.
