Beef Short Ribs

Method

Beef Short Ribs

    Prepare the Marinade

    In a bowl, mix together honey, Dijon mustard, soy sauce, minced garlic, and black pepper.

    Marinate the Ribs

    Place the beef short ribs in a large resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 4 hours or overnight.

    Sear the Ribs

    Preheat the oven to 300°F (150°C). Heat olive oil in a large Dutch oven over medium-high heat. Remove the ribs from the marinade and sear them on all sides until browned.

    Braise the Ribs

    Add the reserved marinade and beef broth to the Dutch oven. Bring to a simmer, then cover and transfer to the oven. Braise for 3 hours or until the meat is tender.

Potatoes Au Gratin

    Prepare the Baking Dish

    Preheat the oven to 375°F (190°C). Grease a baking dish with butter.

    Layer the Potatoes

    Layer half of the sliced potatoes in the greased baking dish. Sprinkle with salt, pepper, and half of the garlic.

    Add Cream and Cheese

    Pour half of the heavy cream over the potatoes and sprinkle with half of the cheddar cheese. Repeat the layers with the remaining potatoes, cream, garlic, and cheese.

    Bake

    Cover the baking dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes or until golden and bubbly.

Natural Jus

    Prepare the Jus

    In a saucepan, combine beef broth, red wine, and fresh thyme. Bring to a simmer over medium heat.

  2. 10

    Thicken the Jus

    Add cornstarch mixed with water to the simmering broth and stir until thickened. Remove from heat.
