    Prepare the Beef

    Preheat your oven to 325°F (160°C). Season the beef short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the short ribs and sear them on all sides until browned. Remove from pot and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until vegetables are softened. Add minced garlic and cook for another 1-2 minutes.

    Add Liquids and Herbs

    Pour in the beef broth and crushed tomatoes, scraping the bottom of the pot to release any browned bits. Add bay leaves and fresh thyme.

    Combine and Braise

    Return the seared short ribs to the pot, making sure they are submerged in the liquid. Bring to a simmer, then cover the pot and transfer it to the preheated oven.

    Slow Cook

    Braise the short ribs in the oven for 3-4 hours, or until the meat is tender and falls off the bone.

    Serve

    Remove from the oven, discard bay leaves, and serve the short ribs with the vegetable sauce over mashed potatoes or polenta.
