Prepare the Pork
In a large pot, add the pork belly and water. Bring to a boil and simmer for about 30 minutes to tenderize the meat.

Add Vegetables
Add the sliced onion, quartered tomatoes, and fish sauce to the pot. Continue to simmer for another 15 minutes.

Add Tamarind and Seasonings
Stir in the tamarind paste, green chili peppers, salt, and black pepper to the broth. Adjust to taste. Simmer for an additional 10 minutes.

Add Shrimp and Ong Choy
Finally, add the shrimp and ong choy to the pot. Cook for about 5 minutes or until the shrimp turns pink and the ong choy is tender.

Ladle the sinigang into bowls and serve hot with steamed rice on the side.
