    Cook the Bacon

    In a large skillet, heat olive oil over medium heat. Add diced bacon and cook until crispy. Remove bacon from skillet and set aside, leaving the drippings in the pan.

    Sauté Vegetables

    In the same skillet, add chopped onion and minced garlic. Sauté until onion is translucent. Add sliced mushrooms and cook for about 5 minutes, until softened.

    Cook the Rice

    Stir in Arborio rice and cook for 1-2 minutes until the rice is lightly toasted. Begin adding chicken broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more.

    Add Shrimp and Spinach

    When the rice is almost tender (about 15-20 minutes), add the shrimp, sundried tomatoes, and fresh spinach. Continue to cook until the shrimp is pink and cooked through and the spinach has wilted.

    Finish with Cheese

    Remove the skillet from heat and stir in the grated Parmesan cheese. Season with salt and black pepper to taste. Mix well.

    Serve

    Serve the risotto hot, garnished with the crispy bacon and additional Parmesan cheese if desired.
