Preparation

    Prepare the Potatoes

    Preheat the oven to 375°F (190°C). Toss fingerling potatoes with olive oil, minced garlic, and fresh rosemary. Season with salt and pepper. Spread on a baking sheet and roast for 30-35 minutes until tender and golden.

    Prepare the Garlic Butter Sauce

    In a small saucepan, melt the butter over low heat. Add minced garlic and sauté until fragrant. Stir in lemon juice and chopped parsley. Keep warm.

Grilling Seafood

    Grill the Prawns and Scallops

    Preheat the grill to medium-high heat. Season the Kauai prawns and U-10 scallops with salt and pepper. Grill the prawns for 3-4 minutes per side and the scallops for 2-3 minutes per side until cooked through.

    Bake the Crab Legs

    Place king crab legs on a baking sheet. Brush with olive oil, salt, and pepper, and bake in the oven for 15-20 minutes until heated through.

    On a large platter, arrange the grilled prawns, scallops, and baked crab legs alongside the roasted fingerling potatoes. Drizzle the shellfish with the garlic lemon butter sauce before serving.
