    Prepare the Vinaigrette

    In a bowl, whisk together the serrano pepper, grated ginger, rice vinegar, soy sauce, sesame oil, and honey until well combined. Set aside.

    Prepare the Vegetables

    Blanch the Choi Sum in boiling water for 1-2 minutes until bright green, then transfer to ice water to stop cooking. Drain and set aside. For Oden vegetables, steam or simmer until tender.

Cooking the Fish

    Sear the Fish

    Season the fish fillets with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Once hot, add the fish fillets and sear for about 3-4 minutes on each side, or until cooked through and golden brown.

Assembly

    Plate the Dish

    On a serving plate, arrange the blanched Choi Sum and Oden vegetables. Place the seared fish fillet on top and drizzle with the sizzling serrano ginger vinaigrette. Serve immediately.
