    Heat olive oil in a skillet over medium-high heat. Season the fish fillets with salt and black pepper. Once the oil is hot, place the fish fillets skin-side down in the skillet. Sear for about 4-5 minutes until the skin is crispy. Flip the fillets and cook for an additional 3-4 minutes until cooked through.

Making Fire Roasted Tomato Sauce

    Preparing the Sauce

    In a saucepan, heat olive oil over medium heat. Add chopped onions and minced garlic, sautéing until translucent. Add the fire-roasted tomatoes, basil, oregano, and red pepper flakes. Simmer for 10-15 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

Making Mushroom Duxelle

    Preparing the Duxelle

    In another skillet, melt butter over medium heat. Add finely chopped shallots and sauté until soft. Add the chopped mushrooms and thyme. Cook until the mushrooms release their moisture and become dry, about 10-15 minutes. Season with salt and black pepper.

Plating

    On a plate, place a portion of mushroom duxelle. Top with a seared fish fillet and drizzle with fire-roasted tomato sauce. Serve hot.
