Preparation

    Prepare the Sweet Potatoes

    Peel and chop the Yama sweet potatoes into cubes. Boil in salted water until tender, about 15 minutes. Drain and mash with butter and salt to taste. Set aside.

    Cook the Kale

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute. Add chopped kale and cook until wilted, about 5-7 minutes. Season with salt to taste and set aside.

    Make the Curry Sauce

    In a saucepan, combine red Thai curry paste and coconut milk. Stir well and bring to a simmer. Add lime juice and fish sauce, then simmer for an additional 5 minutes. Set aside.

Cooking the Salmon

    Sear the Salmon

    Heat olive oil in a skillet over medium-high heat. Season salmon fillets with salt and black pepper. Place the fillets skin-side down in the skillet and sear for about 4-5 minutes. Flip the fillets and cook for another 3-4 minutes or until cooked through and crispy on the outside.

Assembly

    Plate the Dish

    On each plate, place a scoop of mashed Yama sweet potato, add a portion of wilted kale, and top with the seared salmon fillet. Drizzle with red Thai curry sauce and serve immediately.
