    Prepare the Marinade

    In a bowl, combine soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and chili flakes. Mix well and set aside.

    Marinate the Seafood

    Slice each type of fish into 1-inch thick pieces. Place the fish in the marinade, ensuring they are well coated. Let them marinate in the refrigerator for at least 30 minutes.

Cooking

    Sear the Fish

    Heat a skillet over high heat. Remove the fish from the marinade and sear each side for about 30 seconds to 1 minute, depending on your preference for doneness. The center should remain rare.

Serving

    Plating

    Thinly slice the seared fish and arrange them on a serving platter. Drizzle any remaining marinade over the top.

    Garnish

    Sprinkle with sliced scallions, toasted sesame seeds, and microgreens or seaweed. Serve immediately.
