Prepare Ahi

Season the Ahi
In a bowl, mix olive oil, salt, black pepper, paprika, cumin, garlic powder, and cayenne pepper. Rub this mixture onto the Ahi tuna fillets and let them marinate for 15 minutes.

Cook the Ahi
Heat a skillet over medium-high heat. Sear the Ahi fillets for about 2-3 minutes on each side until they are nicely browned. Adjust the cooking time based on your preferred doneness.

Mix Pickling Liquid
In a separate bowl, whisk together rice vinegar, sugar, and salt until dissolved. Pour this over the vegetables and mix well. Let it sit for at least 10 minutes to marinate.
Prepare Soy Mustard Sauce

Combine Sauce Ingredients
In a small bowl, whisk together soy sauce, Dijon mustard, honey, and sesame oil until well combined.
Serve

Plate the Dish
Slice the seared Ahi and serve it alongside the namasu. Drizzle with the soy mustard sauce before serving.
