    Prepare the Chocolate Mixture

    Preheat your oven to 190°C (375°F). Melt the dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.

    Mix Egg Yolks

    In a separate bowl, whisk together the egg yolks, granulated sugar, and vanilla extract until pale and creamy.

    Combine Mixtures

    Gradually add the melted chocolate mixture to the egg yolk mixture, stirring until well combined.

    Whip Egg Whites

    In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Carefully fold the whipped egg whites into the chocolate mixture, being gentle to retain the airiness.

    Bake

    Pour the soufflé mixture into greased ramekins, filling them about 3/4 full. Place in the oven and bake for 12-15 minutes until puffed and set on the outside.

    Remove from the oven and serve immediately with raspberry coulis.

    Prepare the Coulis

    In a saucepan over medium heat, combine fresh raspberries, granulated sugar, and lemon juice. Cook for about 5-7 minutes, stirring gently until the raspberries break down and the mixture thickens slightly.

    Blend and Strain

    Remove from heat and let cool slightly. Blend the mixture until smooth and strain through a fine sieve to remove seeds, if desired.

    Drizzle the raspberry coulis over the warm chocolate soufflé before serving.
