Fish Preparation

    Prepare the Fish

    Preheat your oven to 375°F (190°C). Season the fish fillets with salt and black pepper on both sides.

    Coat the Fish

    Set up a breading station with three shallow dishes. Place flour in the first dish, beaten eggs in the second, and a mix of macadamia nuts and panko breadcrumbs in the third. Dredge each fillet in flour, dip in eggs, and finally coat with the macadamia nut mixture.

    Bake the Fish

    In a large oven-safe skillet, heat olive oil over medium heat. Add the coated fillets and cook for 2-3 minutes on each side until golden brown. Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes until cooked through.

Lobster Essence Sauce

    Prepare the Sauce

    In a saucepan, melt the butter over medium heat. Add the shallots and garlic, sauté until translucent. Pour in the lobster stock and bring to a simmer.

    Finish the Sauce

    Stir in the heavy cream and lemon juice. Simmer for 5-7 minutes until the sauce thickens. Season with salt and black pepper to taste.

Serving

    Plate the Dish

    Place the macadamia nut crusted fish on a plate and drizzle with the lobster essence sauce. Garnish with chopped chives.
