Preparation

    Prepare the Ribs

    Remove the membrane from the back of the ribs and pat them dry with paper towels.

    Season the Ribs

    In a mixing bowl, combine salt, black pepper, cayenne pepper, garlic powder, onion powder, Szechuan peppercorns, and brown sugar. Rub this spice mix evenly over the ribs.

Smoking

    Prepare the Smoker

    Soak the Kiawe wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Ribs

    Place the ribs in the smoker and add the soaked Kiawe wood chips. Smoke the ribs for about 3 hours, or until they are tender, maintaining a constant temperature.

Garnishing

    Prepare the Garnish

    Chop the chives finely. Once the ribs are done smoking, remove them from the smoker, let them rest for a few minutes, then slice into portions.

    Serve the Ribs

    Sprinkle the chopped chives and sesame seeds on top of the ribs before serving.
