Roasted Tomatoes

Prepare the Tomatoes
Preheat your oven to 250°F (120°C). Slice the Roma tomatoes in half lengthwise and place them cut side up on a baking sheet.

Seasoning
Drizzle the tomatoes with olive oil, and sprinkle with salt, pepper, and balsamic vinegar.

Roasting
Roast the tomatoes in the preheated oven for 24 hours, or until they are dried and concentrated in flavor.
Parmesan Crunch

Prepare the Crunch
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix Ingredients
In a bowl, combine the grated Parmesan cheese, garlic powder, and dried oregano.

Bake
Spread the Parmesan mixture onto the prepared baking sheet in a thin layer. Bake for 5-7 minutes, or until golden and crispy. Let cool, then break into pieces.

In a large bowl, toss the romaine lettuce with Caesar dressing until well coated.

Top the salad with roasted tomatoes, shaved Parmesan cheese, and croutons.
