Prime Rib

Prepare the Prime Rib
Preheat the oven to 450°F (232°C). In a small bowl, mix together salt, black pepper, garlic powder, and chopped fresh rosemary. Rub this mixture all over the prime rib. Drizzle with olive oil and let it sit at room temperature for about 30 minutes.

Roast the Prime Rib
Place the prime rib on a rack in a roasting pan, fat side up. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C) and continue roasting until desired doneness is reached (about 1.5 to 2 hours for medium rare). Let it rest for at least 20 minutes before slicing.

Prepare Potatoes
Preheat the oven to 375°F (190°C). Slice the russet potatoes thinly. In a saucepan, heat the heavy cream and minced garlic until simmering. Grease a baking dish and layer the potatoes, pouring the cream mixture over each layer. Top with Gruyere and Parmesan cheese, season with salt, pepper, and nutmeg.

Roast the Vegetables
Preheat the oven to 400°F (204°C). Toss the haricot vert and halved shallots with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender and lightly caramelized.
