Dough Preparation

    Make the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Gradually add water and mix until a dough forms. Knead the dough for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    In a large bowl, mix together the ground pork, chopped shrimp, diced lup cheong, minced garlic, green onions, soy sauce, sesame oil, and grated ginger until well combined.

Potsticker Assembly

    Assemble the Potstickers

    Roll out the dough on a floured surface until thin. Cut into circles (about 3 inches in diameter). Place a spoonful of filling in the center of each circle. Fold the dough over the filling and pinch to seal, creating pleats if desired.

Cooking

    Cook the Potstickers

    Heat a non-stick skillet over medium heat and add a little oil. Place the potstickers in the skillet and cook for about 2-3 minutes until the bottoms are golden brown. Add a splash of water (about 1/4 cup), cover, and steam for another 5-7 minutes until cooked through.

Sauce Preparation

    Make Garlic Aioli

    In a small bowl, mix together mayonnaise, minced garlic, lemon juice, and salt. Adjust seasoning to taste.

    Make Korean Chili Vinaigrette

    In another small bowl, whisk together rice vinegar, gochujang, sesame oil, honey, and minced garlic until well combined.
