Method

For the Potato Gnocchi

    Prepare the Potatoes

    Boil the potatoes until tender. Drain and let them cool slightly, then peel and mash until smooth.

    Make the Dough

    In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms, being careful not to overwork it.

    Form the Gnocchi

    Divide the dough into small pieces and roll them into logs. Cut into 1-inch pieces and use a fork to create ridges.

    Cook the Gnocchi

    Bring a pot of salted water to a boil. Drop the gnocchi in batches and cook until they float, about 2-3 minutes. Remove and set aside.

For the Sweet Pea Foam

    Blend the Ingredients

    In a saucepan, bring vegetable broth to a boil. Add sweet peas and cook for 3-4 minutes until tender. Blend until smooth.

    Add Cream and Season

    Stir in heavy cream and season with salt and white pepper. Blend again until well combined.

    Foam the Mixture

    Using an immersion blender, whip the mixture until it becomes frothy. Set aside to keep warm.

To Serve

    Plate the Dish

    Place the gnocchi on a plate, spoon the sweet pea foam around it, and garnish with microgreens and a drizzle of olive oil.
