    Sauté the Meats

    In a large paella pan or skillet, heat olive oil over medium heat. Add the chorizo and Portuguese sausage, and sauté until browned, about 5-7 minutes.

    Cook the Vegetables

    Add the chopped onion, bell pepper, and minced garlic to the pan. Cook until the vegetables are soft, about 5 minutes. Stir in the diced tomatoes.

    Add the Rice

    Stir in the basmati rice and cook for an additional 2 minutes, allowing the rice to absorb the flavors.

    Add Liquids and Seasonings

    Pour in the chicken broth, add paprika, saffron, salt, and black pepper. Stir well and bring to a boil.

Cooking

    Simmer

    Reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is almost cooked.

    Add Seafood

    Gently fold the shrimp and clams into the rice. Cover and cook for another 5-7 minutes or until the shrimp are pink and the clams have opened.

    Finish with Peas

    Stir in the frozen peas and cook for another 2-3 minutes. Adjust seasoning with salt and pepper to taste.
