Directions
- 1
Prepare the Spaghetti
Bring a large pot of salted water to a boil. Add the Onda Pasta Spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
- 2
Make the Spicy Tomato Sauce
In a large skillet, heat the Laudemio EVOO over medium heat. Add the minced garlic and red chili flakes, sautéing for 1-2 minutes until fragrant but not browned. Add the canned whole tomatoes, breaking them up with a spoon. Simmer the sauce for about 15 minutes, stirring occasionally. Season with salt to taste.
- 3
Combine Pasta and Sauce
Add the drained spaghetti to the skillet with the spicy tomato sauce. Toss to coat the pasta evenly. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
- 4
Serve
Plate the pasta and top it with torn pieces of fresh burrata cheese. Grate Parmigiano Reggiano over the top and garnish with fresh basil leaves. Drizzle with additional Laudemio EVOO before serving.
