Pan Seared Opah

Prepare the Fish
Season the Opah fillets with salt and black pepper on both sides.

Sear the Opah
In a large skillet, heat olive oil over medium-high heat. Sear the Opah fillets for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
Gnocchi

Cook the Gnocchi
In a large pot of boiling salted water, add the potato gnocchi and cook until they float to the surface, about 2-3 minutes. Drain and set aside.

Prepare the Carrots
Peel and cut the Maui heirloom carrots into sticks.

Preserved Lemon Butter

Make the Lemon Butter
In a small saucepan, melt unsalted butter over low heat. Add minced garlic and chopped preserved lemons, cooking for 2-3 minutes until fragrant. Remove from heat.
