Pickling the Onions

Pickle the Onions
Slice the red onion thinly and place it in a jar. In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a simmer until sugar is dissolved. Pour the mixture over the onions in the jar. Let it sit for at least 30 minutes to pickle.
Assembling the Salad

Prepare the Salad
Wash and chop the organic romaine lettuce and place it in a large bowl. Add the pickled red onions (drained), anchovy fillets, and grated parmesan cheese.

Make the Dressing
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to taste. Adjust seasoning as desired.

Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
