Prepare the Ingredients
Dice the eggplant, trim the long beans, and halve the Kahuku tomatoes. Cut the Ora King salmon into bite-sized pieces.

Cook the Risotto
In a large saucepan, heat a little oil over medium heat. Add the eggplant and long beans, cooking until softened. Stir in the Arborio rice and cook for about 2 minutes.

Add Coconut Milk and Curry Paste
Mix in the red curry paste and coconut milk, stirring continuously. Add a pinch of salt and black pepper.

Simmer the Risotto
Reduce the heat and let the mixture simmer, stirring occasionally until the rice is al dente, about 20 minutes.

Finish with Salmon
Fold in the salmon pieces and Kahuku tomatoes. Add fish sauce and lime juice. Cook for another 5 minutes until the salmon is cooked through.

Add Fresh Basil
Stir in fresh basil and adjust seasoning with salt and pepper to taste.

Serve the Dish
Spoon the risotto into bowls. Garnish with lime wedges and chili flakes as desired.
