Cognac Peppercorn Demi Glace

Truffle Garlic Mashed Potatoes

Method

Steak Preparation

  1. 1

    Season the Steak

Generously season both sides of the Black Angus Ribeye Steak with salt and black pepper.

  2. 2

    Grill the Steak

Preheat the grill to high heat. Brush the steak with olive oil and place it on the grill. Cook for about 4-5 minutes per side for medium-rare, adjusting time for desired doneness.

Cognac Peppercorn Demi Glace

  1. 3

    Prepare the Sauce

In a saucepan, heat the cognac over medium heat and let it reduce by half. Add the beef stock and black peppercorns, simmering until reduced by half again. Stir in heavy cream and butter, cooking until thickened.

Truffle Garlic Mashed Potatoes

  1. 4

    Cook the Potatoes

Peel and cube the russet potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot.

  2. 5

    Mash and Flavor

Add heavy cream, truffle oil, minced garlic (sautéed until fragrant), and butter to the potatoes. Mash until smooth and creamy.

Vegetables

  1. 6

    Prepare the Vegetables

Preheat the oven to 425°F (220°C). Toss the green beans and baby carrots with olive oil, salt, and black pepper. Spread on a baking sheet and roast for about 20 minutes until tender.
