Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a rice cooker or pot, combine the rinsed rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce heat and simmer for about 20 minutes until water is absorbed.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.
Assemble Nigiri

Form Rice Balls
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and gently form it into an oval shape.

Add Fish
Slice the Ahi, Salmon, and Hamachi into thin pieces. Place a slice of each fish on top of the rice ball, pressing lightly to adhere.
Serve

Plate and Enjoy
Arrange the nigiri on a plate and serve with soy sauce, wasabi, and pickled ginger on the side.
