Preheat the Oven
Preheat your oven to 300°F (150°C).

Prepare the Ribs
Rub the baby back ribs with salt, black pepper, garlic powder, and onion powder. Let them sit at room temperature for about 30 minutes.
Making the Sauce

Combine Sauce Ingredients
In a medium saucepan, combine soy sauce, brown sugar, rice vinegar, sesame oil, minced ginger, and minced garlic. Bring to a simmer over medium heat, stirring until the sugar dissolves.

Thicken the Sauce
Reduce heat to low and let the sauce simmer for about 10 minutes until slightly thickened. Remove from heat and set aside.
Cooking the Ribs

Bake the Ribs
Place the seasoned ribs on a baking sheet lined with foil. Bake in the preheated oven for 2.5 to 3 hours until tender.

Glaze the Ribs
During the last 30 minutes of cooking, brush the ribs with the Mongolian sauce and return to the oven.
Serving

Garnish and Serve
Remove ribs from the oven, let them rest for a few minutes, then slice. Garnish with chopped chives and toasted sesame seeds before serving.
