For the Chocolate Cake

    Prepare the ramekins

    Preheat the oven to 200°C (400°F) and grease four ramekins with butter, then dust with cocoa powder.

    Melt chocolate and butter

    In a heatproof bowl, combine the dark chocolate and butter. Melt them together over a pot of simmering water, stirring until smooth. Remove from heat.

    Mix ingredients

    Whisk the sugar into the melted chocolate mixture until combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.

    Add flour

    Gently fold in the all-purpose flour until just combined. Do not overmix.

    Fill ramekins

    Divide the batter evenly among the prepared ramekins. Place them on a baking tray.

    Bake

    Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

    Cool briefly

    Remove from the oven and let them cool for 1 minute before inverting onto plates.

    Prepare the coulis

    In a saucepan over medium heat, combine the fresh raspberries, sugar, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the raspberries break down and the mixture thickens slightly.

    Blend and strain

    Remove from heat and blend until smooth. Strain the mixture through a fine mesh sieve to remove the seeds, pressing firmly to extract as much liquid as possible.
