Soufflé Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C). Grease four ramekins with butter and dust with sugar, tapping out the excess.

    Melt Chocolate

    In a double boiler, melt the bittersweet chocolate and butter together until smooth. Remove from heat and let cool slightly.

    Mix Egg Yolks

    In a separate bowl, whisk together the egg yolks and half of the granulated sugar until pale and creamy. Stir in the cooled chocolate mixture, flour, vanilla extract, and salt.

    Whip Egg Whites

    In a clean bowl, whip the egg whites until soft peaks form. Gradually add the remaining sugar and continue whipping until stiff peaks form.

    Combine Mixtures

    Gently fold the whipped egg whites into the chocolate mixture until no white streaks remain.

    Bake

    Spoon the batter into the prepared ramekins and place them on a baking sheet. Bake for 12-15 minutes until the soufflés have risen and are slightly firm to the touch.

    Prepare the Coulis

    In a saucepan, combine the raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down and the mixture thickens, about 10 minutes. Strain through a fine sieve to remove seeds.

    Remove the soufflés from the oven and let them cool slightly. Serve warm with raspberry coulis and a scoop of vanilla ice cream.
