    Clean the clams

    Rinse the Manila clams under cold water, scrubbing the shells to remove any sand or grit.

    Slice the sausage

    Slice the Portuguese sausage into thin rounds.

    Prepare the garlic and ginger

    Mince the garlic cloves and grate the ginger.

Cooking

    Sauté the sausage

    In a large pot, heat olive oil over medium heat. Add the sliced Portuguese sausage and sauté until browned, about 5-7 minutes.

    Add aromatics

    Add the minced garlic and grated ginger to the pot and sauté for an additional 2 minutes until fragrant.

    Add mushrooms and seasoning

    Stir in the Hon Shimeji mushrooms and curry powder. Cook for 3-4 minutes until the mushrooms are tender.

    Combine liquids

    Pour in the coconut milk and chicken broth, stirring to combine. Bring to a gentle simmer.

    Add clams

    Add the cleaned Manila clams to the pot. Cover and cook for 5-7 minutes, or until the clams open.

    Season and serve

    Taste and season with salt and black pepper. Serve hot, garnished with fresh cilantro and lime wedges.
