Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions, typically with a 1:1 water-to-rice ratio. Once cooked, let it cool and season with salt and a little sesame oil.

Char the Tuna
Season the fresh tuna steak with salt, black pepper, and a drizzle of sesame oil. Sear the tuna on high heat for about 1-2 minutes on each side until the outside is charred but the inside remains rare. Remove from heat and let it rest before slicing into thin strips.

Assemble the Roll
Place a nori sheet on a bamboo sushi mat. Wet your hands to prevent sticking, then spread a thin layer of sushi rice over the nori, leaving a border at the top. Lay the charred tuna, avocado, and cucumber in a line across the center of the rice. Drizzle some garlic chili sauce over the filling.

Roll the Sushi
Using the bamboo mat, carefully lift the edge of the mat and start rolling the sushi tightly away from you, tucking in the filling as you go. Continue rolling until you reach the exposed edge of the nori. Wet the edge with a little water to seal the roll.

Slice and Serve
With a sharp knife, slice the roll into bite-sized pieces. Serve with soy sauce, additional garlic chili sauce, and garnish with chopped green onions and sriracha on the side.
