Preparation of Potatoes

Roast the Potatoes
Preheat the oven to 400°F (200°C). Toss the quartered Red Bliss potatoes with olive oil, minced garlic, thyme, salt, and pepper. Spread them in a single layer on a baking sheet and roast for about 25-30 minutes, or until golden and tender, stirring halfway through.

Prepare the Fish
In a bowl, combine chopped macadamia nuts, panko breadcrumbs, melted butter, salt, black pepper, and lemon juice. Press this mixture onto the top side of each fish fillet.

Cook the Fish
Heat a skillet over medium heat and add a tablespoon of butter. Place the fish fillets crust-side down in the skillet and cook for 4-5 minutes until golden brown. Carefully flip and cook for an additional 3-4 minutes or until the fish is cooked through and flakes easily with a fork.
Lobster Essence

Make the Lobster Essence
In a saucepan, melt butter over medium heat. Add finely chopped shallots and sauté until translucent. Pour in the white wine and reduce by half. Add lobster stock and cream, simmer for about 10 minutes until thickened. Season with salt and pepper to taste.

Serve
On each plate, arrange a portion of roasted Red Bliss potatoes. Top with the macadamia nut-crusted fish fillet and drizzle with the lobster essence. Enjoy your meal!
